Directions

  1. Lay out chopped butternut squash on lined baking sheet.
  2. Coat evenly with olive oil, cinnamon and brown sugar.
  3. Bake at 375°F for 25 minutes, until soft and caramelized.
  4. In a bowl, combine Willow Tree Cranberry Walnut Chicken Salad and baked butternut squash, then set aside.
  5. Line a serving bowl with a bed of fresh baby spinach.
  6. Add Willow Tree Chicken Salad mixture.
  7. Top with extra cranberries, walnuts and crumbled goat cheese.
  8. Serve and enjoy!
