- 1 cup of Willow Tree Farm Classic Chicken Salad
- 1 cup roasted cauliflower, cut in 1-inch florets and cooled
- 1 cup roasted butternut, cubed and cooled
- 1 cup roasted beets, cubed and cooled
- 4 cups of kale, chopped
- 1/2 cup pepitas
- 1/4 cup balsamic vinaigrette
- In the bottom of a clean, dry quart jar, spread ½ cup of Willow Tree Farm Classic Chicken Salad.
- Add chopped kale, roasted beets, cauliflower and cubed roasted butternut squash, dividing them between the jars, and layering them.
- Top with chopped kale and then pepitas, again dividing the portion between the jars.
- Top with a clean dry lid and refrigerate.
- When ready to enjoy, pour out mason jar ingredients into a bowl and top with a balsamic vinaigrette of your choice.
